This week Josh and I have decided to try and eat no meat and prepare meals with herbs and vegetables. So far we have been doing pretty well. We both love eating vegetables and trying new foods. Yesterday, I prepared a Caprese salad along with a cabbage and kale Stir Fry. Josh made a dish called Tabbouleh with cracked wheat. The dinner was delicious and refreshing at the same time.
Eating clean feels wonderful. I felt satisfied and not overly stuffed like I do when I eat meat. Making the Caprese salad is fairly easy. It took about 15 minutes to prepare. Here's what I put in the salad if you want to attempt to make it for yourself!
- 3 tomatoes (depending on how much you want to make)
- Fresh Basil (generous amount)
- Fresh Mozzarella cheese (Trader Joe's)
- Paul Newman's Balsamic Vinigrette
- Himalayan salt and Cracked pepper for taste
- 1 tsp of olive oil
Rinse and cut tomatoes and basil leaves. Tear mozzarella cheese into small, bite size pieces. Add Paul Newman's dressing and olive oil. Add salt and pepper. Mix all ingredients in a large bowl and serve. Chill for 20 minutes (optional)
