Most of us live busy lives and sometimes preparing meals takes too much of our time so I'm here to share with you a quick healthy meal I prepare under 30 minutes when I don't have a lot of time to spend in the kitchen.
This soup is so delicious. Surprisingly, I'm not a big fan of tomato soup, but when it's mixed with red pepper it has a nice peppery taste to it. I add fresh basil and cracked black pepper to add a little seasoning.
First, I cut the polenta in slices and season it with garlic powder, onion powder, and cayenne pepper. Then, I cook the polenta in Avocado oil in a pan on top of the stove. Make sure to flip the polenta over about 3 to 4 times to make sure it cooks evenly on both sides. This should take about 10 minutes or less.
Next, heat up the soup which takes 5 minutes. Pour soup in a bowl and add polenta slices to the soup. Last, sprinkle fresh basil leaves to complete the meal.
- 1 box of Trader Joe's Roasted Red Pepper Soup
- 1 package of fresh basil
- 100% Avocado Oil
- Cracked black pepper, cayenne pepper, garlic powder, and onion powder.
